How to Cook Pininyahang Manok

Hubby and I were way too busy these past few weeks that most of our days were spent in Manila or on travels. Coming home for about a day or so in a week is enough before going out again for another scheduled travels and busyness. Now that we had time to come home yesterday, I've had the chance to cook a meal as well. We missed eating home-cooked meals too! That's how busy we are. 

So here, I'd like to share with you a simple recipe. Have missed taking a photo of it though because I clearly had no time to think about anything else but to satisfy our hunger first. LOL. Yet of course, a borrowed photo from the web will go with the cooking procedure.

Servings: 4-6 people
Ingredients: 

chicken cuts (half kilo)
2 medium potatoes (chopped)
1 medium carrot (chopped)
1 piece of red and green bell pepper 
3 cloves of garlic (minced)
onion (medium and diced) 
tomato (large and diced)
evaporated milk (1/4 cup)
pineapple chunks in can
fish sauce/patis
iodized salt




Procedure:
  1. Marinate chicken with pineapple juice for about 1 hour.
  2. In a medium hot pan, pour a small amount of oil. Saute garlic, onion and tomatoes. 
  3. Set aside the marinade sauce and mix chicken in the pan until slightly brown.
  4. Add pineapple chunks, potatoes and carrots. Cover for 3 minutes.
  5. Pour in evaporated milk together with the pineapple sauce then simmer for 5 minutes.
  6. Add the red and green bell pepper on top.
  7. Season enough amount of fish sauce and salt to desired taste. Serve with hot rice.

My hubby and I had an early Valentines dinner date which was last Sunday night. He always hate traffic which is expected on that sweet day. And so, he thought of having dinner with me earlier at Don Henrico's along Midtown Plaza! I was like grinning in excitement to taste this 14" pizza! I'm a pizza lover and my hubby exactly knows that. Tagaytay Travel

Last two weeks ago, we had this 3-day conference for church workers in Manila Area which was held at CCT Tagaytay Retreat and Training Center - a fellowship/seminar/conference for the United Methodist Church workers. My husband, who is a Chinese pastor and I, a church musician, went and had the best experience there. We had the most and respectable speakers and lecturers who came and pastors from North Georgia were also present. Good thing that we were there and it was an awesome place! Not to mention the perfect cold weather that comforted us to sleep on those two nights. Since this Retreat and Training Center is new, which only started operating on June of last year, our church thought of doing our activity there.
